Sundried Tomato & Herb Sausages

This is a great dish if you have friends coming over and need to feed a hungry crowd! They are packed with lots of bright and colourful veggies, and it's really easy to make in advance so your friends can simply build their own tacos.



  • 1 red onion, sliced
  • 1 red pepper, diced
  • 175g pack baby corn, chopped into small pieces
  • 2 Thanks Plants Sundried Tomato & Herb sausages
  • 1/2 tsp cumin seeds 
  • Pinch of chipotle chile (careful, it's hot!)
  • 1 tbsp olive oil
  • 1 tomato, diced
  • Bunch of coriander
  • Jalapeno peppers
  • Avocado, diced 
  • Violife vegan cheese, grated


Taco Tuesday


1. Add the onion, red pepper and baby corn to a pan with the olive oil, chilis and cumin seeds. After cooking the veggies for 3-4 mins, slice your Thanks Plants sausages and add to the pan. Pan fry for another
3 mins. 

2. Soften your tortilla wraps by quickly heating them in the microwave for 20 seconds.  

3. Once the tortillas are ready, add your veggie and Thanks Plants mix to the tortilla.  Top with chopped fresh tomatoes, avocado, coriander, jalapeno peppers and cheese. I love to wrap up my tortillas tight and then toast them on the pan for another minute each side. This helps seal them and gives a nice crunch.
